Brown rice pudding recipe



Recipe for brown rice pudding in our easy vegetarian recipes collection.

Recipe ingredients

  • 1/2 cup brown rice
  • 2 1/2 cups China tea
  • 1 stick cinnamon
  • 1/3 cup sultanas
  • 1/2 cup dried apricots, chopped
  • 1/4 cup almonds sliced
  • Fresh fruit, optional

How to make brown rice pudding

  • Wash the rice thoroughly under running water.
  • Put it in a heavy pan with the tea and simmer gently for about an hour with the cinnamon.
  • Preheat the oven to 350 degrees F.
  • Remove the cinnamon and transfer the rice to an ovenproof dish.
  • Stir in the remaining ingredients and bake for about 25 minutes until done.
  • Serve hot or refrigerate and serve cold.
  • Garnish with sliced fresh fruit, if liked.
