Bulgur wheat stuffed peppers recipe



Recipe for bulgur wheat stuffed peppers in our easy vegetarian recipes collection.

Recipe ingredients

  • 5 ounces bulghar wheat
  • 2 red peppers, cut in half lengthways and seeded
  • 2 yellow peppers, cut in half lengthways and seeded
  • 1 tablespoon sunflower oil
  • 1 onion, chopped
  • 1/2 cup chopped hazelnuts
  • 2/3 cup chopped dried apricots
  • 1/2 teaspoon powdered ginger
  • 1 teaspoon cardamon seeds, ground
  • 2 tablespoons coriander leaves, finely chopped
  • 3 tablespoons natural yoghurt
  • Fresh coriander leaves

How to make bulgur wheat stuffed peppers

  • Place the bulghar wheat in a bowl, pour over 1 1/4 cups boiling water and leave to stand for 15 minutes.
  • Place the peppers in a shallow, lightly oiled ovenproof dish.
  • Place the remaining oil in a saucepan, add the onion and gently fry until softened.
  • Stir in the bulghar wheat, hazelnuts, apricots, ginger and cardamon.
  • Cook for 1 minute, stirring continuously.
  • Add the coriander and yoghurt, mix together and use to fill the pepper shells.
  • Cover the dish tightly with aluminium foil and bake in a preheated oven at 375 degrees F 5 for 30 to 35 minutes.
  • Serve immediately, garnished with coriander leaves.
