  • 1 cup short-grain rice
  • 8 cups cold water

How to make congee

  • Combine the rice and water in a large saucepan with a tight-fitting lid.
  • Bring to a boil, cover and reduce heat to simmer.
  • Cook for 1 1/2 hours.
  • Serve hot.
