Eggs with curly kale recipe

Recipe ingredients

  • 1 pound curly kale
  • 4 eggs
  • 2 tablespoons butter
  • 1/4 cup plain untreated flour
  • 1 1/4 cups milk
  • 1/2 cup Cheddar cheese, grated
  • Salt and freshly ground black pepper

How to make eggs with curly kale

  • Wash the kale and discard the stalks.
  • Pack into a saucepan with a very little water, cover and cook slowly for about 20 minutes until tender.
  • Drain and cut up roughly with a knife and fork.
  • Put the kale in the bottom of a heatproof serving dish and keep warm.
  • Soft boil the eggs.
  • Meanwhile, make the cheese sauce. Melt the butter in a pan and stir in the flour.
  • Cook, stirring for a few minutes. Gradually add the milk.
  • Continue to stir until the sauce has thickened.
  • Add the cheese. When it melts, season.
  • Plunge the eggs in cold water and remove the shells.
  • Lay them on the bed of kale and cover with the sauce.
  • Heat the dish through in the oven or under the grill.
