Green mayonnaise recipe



Recipe for green mayonnaise in our easy vegetarian recipes collection.

Recipe ingredients

  • 3 tablespoons chopped fresh spinach
  • 3 tablespoons chopped watercress
  • 3 tablespoons chopped spring onion
  • 3 tablespoons chopped parsley
  • 1 cup mayonnaise
  • 1/2 teaspoon grated nutmeg
  • Salt to taste

How to make green mayonnaise

  • Put the spinach, watercress, spring onion and parsley in a small saucepan.
  • Add water to cover them.
  • Quickly bring to the boil.
  • Remove the saucepan from the heat.
  • Let stand for 1 minute.
  • Drain the greens well.
  • Rub them through a sieve or purse them in a blender.
  • Drain off excess liquid.
  • Put the mayonnaise in a blender or medium sized bowl.
  • Add the purse, nutmeg and salt to taste.
  • Blend until evenly mixed.
