Savory nut loaf recipe

Recipe ingredients

  • 1 tablespoon olive oil, plus extra for greasing
  • 1 onion, chopped
  • 1 leek, chopped
  • 2 celery sticks, finely chopped
  • 8 ounces mushrooms, chopped
  • 2 garlic cloves, crushed
  • 1, 5 ounces, can lentils, rinsed and drained
  • 1 cup mixed nuts, such as hazelnuts, cashew nuts and almonds, finely chopped
  • 1/2 cup flour
  • 2 cups grated mature Cheddar cheese
  • 1 medium egg, beaten
  • 3 to 4 tablespoons chopped fresh mixed herbs
  • Salt and freshly ground black pepper
  • Chives and sprigs of fresh flat leaf parsley, to garnish

How to make savory nut loaf

  • Preheat the oven to 375 degrees F.
  • Lightly grease the base and sides of a 2 pounds loaf tin and line with greaseproof paper.
  • Heat the oil in a large saucepan, add the chopped onion, leek, celery sticks and mushrooms and the crushed garlic.
  • Cook gently for 10 minutes, until the vegetables have softened, stirring occasionally.
  • Add the lentils, mixed nuts, flour, grated cheese, egg and herbs.
  • Season with salt and pepper and mix thoroughly.
  • Spoon the nut, vegetable and lentil mixture into the prepared loaf tin, ensuring that it is pressed into the corners, and level the surface.
  • Bake, uncovered, for 50 to 60 minutes, or until the nut loaf is lightly browned on top and firm to the touch.
  • Cool the loaf slightly in the tin, then turn out on to a serving plate.
  • Serve hot or cold, cut into slices and garnished with chives and flat leaf parsley.
  • This delicious nut loaf makes perfect picnic food.
